Hazelnut Biscuits

These gooey hazelnut biscuits are a classic in many Norwegian homes, especially around Christmas time—but honestly, I think they deserve a spot all year round. They’re one of my absolute favorite cookies. Then again, I love anything with nuts and easy recipes—and these are both.

What makes them extra special is how soft and chewy they are on the inside, with a light crisp on the outside. I always grind my own hazelnuts with the skin on, which gives the cookies the best texture and a richer, deeper flavor. It’s a small step that makes a big difference.

This recipe is incredibly simple, and the bonus for me is dipping the bottoms in dark chocolate. Dark chocolate, hazelnuts, and that gooey texture just go so well together.
