This cake truly lives up to its name—a summer dream. It’s made with two layers of The World’s Best Cake, a beloved Norwegian classic, topped with crushed almonds and filled with the most luscious strawberry mousse. It’s the perfect cake for summer, and the feedback from my app users has been absolutely incredible!
The strawberry mousse is made with Greek yogurt, which naturally contains protein, helping it firm up beautifully without the need for gelatin.The result is a light, creamy, and deliciously smooth mousse with the freshest taste. The key? Use the juiciest, ruby-red summer strawberries for the most intense flavor.
Not only does the mousse add a burst of fruity sweetness, but it also gives the cake a gorgeous, rosy-pink hue. And while strawberry is the star here, you can easily switch up the filling to suit your cravings.
If you’ve never made The World’s Best Cake before, don’t worry! It’s simply a layer of soft yellow cake topped with a delicate, crisp meringue—baked together in the oven.
Once baked, the cake is cut in half and filled with your favorite flavors.
