
In Scandinavia, we love cakes with fresh, fruity fillings — and this Almond & Berry Blush Cake is just that. The star is the Blackcurrant Mascarpone Frosting, which has the most gorgeous natural blush color and a fresh, tangy flavor. It pairs so beautifully with almonds, but almond sponge cake can sometimes be a little overpowering.
Instead, I fill the cake with my Rustic Almond Ganache, which is lip-smacking delicious and slowly melts in your mouth. It spreads beautifully, pipes perfectly, and brings all the rich almond flavor without being too heavy — the perfect partner for the bright blackcurrant frosting.
For the base, I use my go-to vanilla sponge cake — soft, fluffy, and simple — so that all the fillings can shine. Between the layers, there’s also a little zest of lime for brightness and chopped dark chocolate for a subtle crunch.
The whole cake comes together in such a balanced way — fresh, flavorful, never too sweet — exactly the kind of cake we love in Scandinavia.
