Biscotti cookies are one of my absolute favorite things to make during the holiday season. They’re crunchy, so delicious, and they make such beautiful gifts. These ones are extra special—they’re filled with a mix of pistachios, almonds, and dried red berries like cherries, which give both a lovely flavor and a festive look.

You can, of course, swap in your favorite nuts or dried fruits. That’s the beauty of biscotti—totally customizable and always delicious, no matter how you make them.
If you’ve never made biscotti before, don’t worry—it’s easier than it looks. You bake them twice: first as two logs, then slice them and bake again to get that classic crispy texture. This is definitely one of those cookies where once you take a bite, you’ll want another (and another!). I really think you’re going to love them.
