This is the kind of sheet cake I love to make for the holiday season. Adults, kids—honestly, I’ve never met someone who doesn’t love it.

It’s also a typical Scandinavian sheet cake that we absolutely adore here in Scandinavia, especially around the holidays. I love making it for my family—it’s just so delicious.

It starts with a gooey almond meringue cake that’s chewy, crispy, and gooey all at once—and it’s completely gluten-free. The texture is just amazing, with that perfect balance of crunch and chewiness that keeps you going back for more.

On top of that is a thick layer of marshmallow fluff. Now, this isn’t your average fluff—it’s like a cross between marshmallow frosting and marshmallow candy. It’s not as firm as a classic marshmallow, but it has this beautiful melt-in-your-mouth texture that’s soft, fluffy, and just right. Once it sets over the almond base, it thickens just enough to slice into clean, lovely pieces.

You could definitely just finish it with a simple sprinkle of desiccated coconut, and it would be delicious. But I personally love adding a layer of dark chocolate on top of the fluff, followed by a sprinkle of coconut. The combo of the chewy almond crust, the fluffy marshmallow layer, rich chocolate, and coconut is just perfection.
