Instead of just whipping butter and sugar together, it starts with eggs and egg yolks and hot sugar syrup, which creates a light, creamy emulsion that makes the buttercream incredibly smooth and luxurious. The butter is then slowly incorporated, giving it an airy, velvety texture that melts in your mouth. Since the sugar dissolves completely in the hot syrup, there’s no grittiness, just pure silkiness.
