A juicy strawberry cake bursting with fresh strawberry-lemon flavor—this cake is like a slice of summer on your plate! It’s incredibly fresh, light, and absolutely scrumptious.

The cake itself is made up of four layers of tender vanilla sponge, soft as clouds, each filled with silky, lightly whipped crème Chantilly.

Tucked between the layers, you’ll find zesty lemon curd and the bright, concentrated flavor of freeze-dried strawberries, gently rehydrated with lemon juice to bring them back to life—just like sun-ripened berries straight from the field.

When strawberries are in season, I love using fresh ones for that extra burst of juicy, ruby-red sweetness. But during the winter, when fresh strawberries aren’t at their best, I find that freeze-dried strawberries combined with a little lemon juice work beautifully. They taste just as vibrant and fresh, making them the perfect alternative.

You can decorate this cake however you like, but I personally love the combination of marshmallow fluff with the soft cake layers, juicy strawberries, and bright lemon curd.
