What makes this version special is the Poppy Seed Lemon Infusion—instead of adding the poppy seeds directly, they’re first soaked in freshly squeezed lemon juice. This step softens their texture and enhances their citrusy flavor, making them blend seamlessly into the whip.
At the very end, I fold in the lemon zest and the infused poppy seed mixture, creating a bright, zesty, and slightly nutty flavor that pairs beautifully with cakes and fillings. It’s perfect for layering inside cakes, frosting desserts, or even enjoying on its own.
