I’ve always loved the combination of lemon and yogurt in my cakes. The acidity from the yogurt, ricotta cheese, and lemon juice is what makes this cake so delightfully soft and tender.

What makes this cake extra special? It’s glazed twice! First, a lemony syrup soaks into the warm cake, making it incredibly flavorful and moist.

Then, once the cake has fully cooled, a thin, glossy icing is drizzled over the top—together, they create the perfect balance of sweetness and citrusy brightness.

This cake takes just 10 minutes to prepare and is one of my top 5 favorite cakes to make year-round. You can bake it in a small baking pan like I do or use a round cake pan—either way, it’s absolutely delicious!
