
Bergens Skillingsbolle – A Norwegian Cinnamon Roll Classic
Bergens Skillingsbolle is one of Norway’s most beloved cinnamon rolls, but for me, it’s something I learned from childhood. While these sweet, buttery rolls are found all over Norway, they are especially well-known in Bergen, where they have been a bakery staple for centuries.

The name Skillingsbolle comes from the old currency “shilling” because, historically, these buns were sold for one shilling each. Though their origins date back to the 16th century, they remain just as popular today.
This recipe is extra special to me because it comes from my grandmother, Agnes, from Bergen. I’ve loved these rolls since I was little, and I always eat them starting from the middle—because that’s the best part! In Norway, it’s common to enjoy Skillingsboller with butter and a slice of brown goat cheese, a true Norwegian touch.

I’ve kept my grandma’s original recipe, only making small adjustments, like using cold milk and eggs and kneading the dough longer for an even better texture. The method couldn’t be simpler—just add everything to a stand mixer and let it do the work.

So if you’ve never had a Bergens Skillingsbolle, you’re in for a treat! These cinnamon rolls are soft, buttery, and packed with cinnamon flavor—a true Norwegian classic.
