If you’ve never had a Norwegian Skolebolle, you are seriously missing out! Let me take you through what makes this bun so special.
It all starts with a soft and fluffy bun, filled with a thick and luscious layer of homemade pastry cream made with real vanilla—just look at those beautiful vanilla specks, they are a dream!

After baking, I drizzle the bun with sweet icing and coat the edges with desiccated coconut. It’s the perfect balance of flavors and textures—creamy, soft, and just a little bit chewy from the coconut. Just one bite, and I promise—you’ll be hooked!

You can find these buns in bakeries all over Norway, but there’s nothing that compares to the homemade version. I learned to make these because my mom always used to bake them. She’s from Bergen, Norway, a place known for its amazing bakeries that made these buns in the traditional homemade style back in the day.

These days, many bakeries take shortcuts, and it’s just not the same. But once you make them yourself, there’s no going back! There’s something so cozy and comforting about baking your own buns at home—the smell, the process, and of course, that first delicious bite.
