Oreo Mascarpone Frosting

This Oreo Mascarpone Frosting is one of my most loved frostings, and for good reason! I used to make it all the time in my cupcake classes, and my students always chose this frosting to decorate their cupcakes—they just loved it so much! And honestly, I get it. I mean, who doesn’t love Oreos? I don’t even know!

This frosting is dreamy in taste—it’s that melt-in-your-mouth kind of delicious, almost like Oreo ice cream in frosting form. If you’re an Oreo lover, you are absolutely going to love this.

One of the best things about this frosting is how stable it is, thanks to both the mascarpone and the crushed Oreos. Just keep in mind that it’s best to whip the mascarpone mixture to soft-medium peaks before adding the Oreos, because the cookies will naturally thicken the frosting even more.

When I make this, I don’t blend the Oreo cookies in too much—I love seeing little streaks of white and bits of Oreo throughout. It gives it that perfect cookies-and-cream look and texture.

Oh, and don’t forget to add the vanilla bean paste—it enhances the flavor beautifully! And a tiny, tiny, tiny pinch of sea salt? Trust me, it takes the taste to the next level.
