If you love cheesecake—especially a good lemon cheesecake—then you’re going to love this Passionfruit Lemon Cheesecake! It’s so fresh in taste, juicy, and bursting with passionfruit and lemon flavor in every bite.

At the bottom, you’ve got a fudgy brownie layer that just melts slowly in your mouth—it’s so delicious on its own but even better as part of this cake. 

On top of that sits the most amazing passionfruit lemon cheesecake layer, followed by a smooth, tangy lemon curd that ties it all together.

Then, just before serving, I scoop on a thick layer of marshmallow fluff—because that’s how it should be done! Marshmallow fluff is like a hybrid between marshmallows and marshmallow frosting—light, stable, and so creamy that it melts slowly in your mouth. Plus, it makes the cheesecake look absolutely beautiful.

To finish it off, I like to lightly torch the top for that classic diner-style look, just like those big, dreamy cheesecakes you’d find at an old-school bakery. But man, this is the kind of cheesecake that—once you take one bite—you just can’t stop. It’s that good.
