
Peach & Raspberry Cream Cake – A Must for Peach Lovers!
If you love peaches, especially when they’re ripe and in season, you have to make this cake! It starts with four layers of soft, delicate sponge cake, each one packed with fresh, juicy peach flavor.
To create the perfect filling, I blend very ripe peaches with fresh raspberries, a squeeze of lemon juice, and a few drops of peach essence to enhance the natural sweetness.

This mixture is left to steep in the fridge, allowing the flavors to deepen before it’s gently folded into whipped mascarpone cream.
Each layer is generously filled with this light, fruity mascarpone cream, making every bite soft, creamy, and full of bright peach-raspberry goodness.

After resting overnight in the fridge, the cake is covered in a smooth layer of mascarpone cream, with a hint of peach-raspberry flavor, for a beautifully fresh and elegant finish.
