If you’re a pistachio lover, you’re absolutely going to fall in love with this delicious Pistachio Diplomat Cream. If you’ve never heard of it before, it starts with a classic vanilla pastry cream blended with pure, homemade pistachio paste. Once cooled, it’s folded with whipped cream to create something truly special.
One of the secrets to getting the best pistachio flavor? It’s all in how you treat the nuts. Instead of toasting them at high heat—which can change the flavor and texture—I gently warm them at a low temperature. This method doesn’t toast them; it just removes moisture and enhances their deep, nutty flavor while keeping that beautiful green color. It takes about 45 minutes, but it’s 100% worth it when you’re making pistachio paste from scratch.
The result is a filling that’s thick, fluffy, and incredibly smooth—it slowly melts in your mouth like a little bite of pistachio heaven.

It’s perfect inside a sweet roll, like my Soft Bakery Buns. I often fill them with diplomat cream and dust the tops with sugar, but this pistachio version? It’s just next-level delicious. You can even add fresh raspberries or strawberries when they’re in season—it’s seriously out of this world.
