I start with my go-to fluffy vanilla sponge cake that so many of you already love. The first layer gets a generous spread of homemade blueberry jam, which is basically just wild blueberries, a tablespoon of sugar, and a touch of lemon. It’s super fresh and honestly amazing even on its own! Then I add the next layer and spread on my thick, fluffy, juicy Lemon Poppy Seed Ganache—it’s bright and zesty, with pockets of extra juicy blueberry jam tucked in there for good measure.
For the third layer, I whip up creamy Greek yogurt, which pairs perfectly with the lemon poppy seed ganache and adds this lovely, tangy smoothness.
