
If you love pistachios, here are two delicious versions of pistachio paste for you to try. The first one is Pure 100% Pistachio Paste, which is exactly what it sounds like—just pure pistachios, nothing else. It has a super vibrant green color and an intense pistachio flavor, perfect for recipes where you want the natural taste of pistachios to shine without any added sweetness.
For this version, I don’t toast the pistachios—I just warm them at a very low temperature. This helps remove excess moisture while keeping their beautiful green color and rich flavor intact. Then, I simply blend them until smooth, resulting in a pure, rich, and incredibly flavorful pistachio paste.

But if you’re like me and love pistachios with a touch of sweetness, my Sweetened Pistachio Paste is the way to go.
This one is even easier—no warming needed! I just blend pistachios with vanilla bean paste, sea salt flakes, powdered sugar, and heavy cream to create a sweet, creamy, and incredibly delicious pistachio paste.

It’s perfect for spreading on pastries, inside cakes, or using as the base for my favorite pistachio ganache. The hint of sea salt and vanilla really take the flavor to the next level!

Both versions are made in a blender and are absolutely delicious—it just depends on how you plan to use them. Personally, I think a little sweetness makes pistachios shine even more, but either way, you can’t go wrong.
