There’s nothing quite like perfectly ripe summer strawberries—they’re naturally sweet, vibrant, and bursting with flavor. When strawberries are at their peak, they’re already incredible on their own.
But one of my favorite things to do is make a strawberry reduction—a simple process that intensifies their flavor even more.
By reducing strawberries, you remove excess water, leaving behind a rich, deeply concentrated strawberry essence that tastes even more incredible.
It’s the perfect way to enhance the natural sweetness and depth of flavor, making it a dream ingredient for strawberry mousse, cake fillings, frostings, or even swirled into yogurt.
Whenever strawberries are in season and I find those ruby-red, flavor-packed berries, I always make extra and freeze it to have on hand year-round.
If you love strawberries, you’ll absolutely love this reduction—it’s pure strawberry goodness in its most intense and irresistible form.
