Perfect Pavlova – A Basic Recipe

This is my go-to basic recipe for Pavlova—a light, crisp meringue with a soft, marshmallow-like center that melts in your mouth. The best part? You can customize the toppings however you like!

For a rich and indulgent twist, top it with whipped cream or banana whipped cream, then add sliced bananas, salted peanuts, and caramel for a delicious Banoffee-style Pavlova. Or, if you love fresh flavors, go for the fruity side by layering it with cream, lemon curd, and vibrant fresh fruit.

I always get questions about how my Pavlova stays so perfectly white even after baking, and my secret is simple: I bake it on the lowest rack in the oven and, once it’s done, I turn off the oven and let it sit inside until it’s completely cold. This method prevents cracks and helps the meringue maintain its pure white color.

You can also use this recipe to make a three-layer Pavlova by dividing the meringue into three loose-bottom baking pans—it’s a beautiful way to serve it for special occasions!
