If you love strawberries, you’re going to fall in love with this fresh strawberry cake.

I always say—if I had a bakery, this would be my best seller. One bite and you’ll want to grab your fork and dive right in.

This strawberry dream cake has the most incredible light texture. It’s made with three soft layers of vanilla sponge cake. Each layer is filled with a fresh Greek yogurt strawberry mousse and ripe, juicy strawberries.

I love using those ruby red strawberries, also known as Malwina here in Sweden. They’re harvested in late July to early August and are known for being super dark red, extra juicy, and honestly some of the most flavorful strawberries you can find. They taste like pure sunshine in summer.

What makes this cake so special is just how fresh it tastes. The strawberry mousse is so light—almost like a whipped cloud. It’s made with Greek yogurt, which naturally thickens in the cake as it chills. There’s no gelatin, no complicated steps—just pure, pillowy perfection.

I usually finish it off with a soft cloud of vanilla Angel Feather Icing. But honestly? If you want to skip the frosting, just pour a lemon glaze on top. It’s so incredibly delicious either way.
