That’s exactly what I set out to create with this recipe.The first thing you’ll notice is just how fresh and creamy it is. As it melts on your tongue, it’s incredibly smooth, with a true strawberry taste that feels like summer in every bite.To deepen the flavor even more, I use a little Greek yogurt, which adds a subtle tang and beautiful richness without overpowering the strawberries.
The star of the show, though, is the combination of freeze-dried strawberries and fresh strawberry purée.I grind the freeze-dried berries into a superfine powder — removing any seeds for a perfectly smooth texture — and blend it with warm strawberry purée. Heating the purée slightly helps intensify the flavor and creates a silky base that keeps the ice cream from tasting watered down.The result is a fresh, creamy, no-churn strawberry ice cream that’s pure joy — light, fruity, and so easy to love.
You can serve it just as it is for a simple, refreshing treat. Or, if you want to take it to the next level, I love topping it with scoops of my Banana Milkshake Mascarpone and a handful of colorful sprinkles. The combination of the sweet banana mascarpone with the bright strawberry ice cream is absolutely delicious — and it freezes beautifully, too, so you can enjoy every last bite later.
