
This cheesecake is all about pure flavor and nostalgic charm. The soft pink layer is made with fresh, ruby-red strawberries, and it’s topped with the creamiest lemon cheesecake layer in the most beautiful, natural yellow. The colors together are just dreamy—fresh, fruity, and so incredibly delicious.
When I look at this cheesecake, it reminds me of old movies from the 70s—pastel buildings, palm trees swaying, and people dressed beautifully, walking along sun-drenched streets.

I didn’t create it with that in mind, but somehow the soft colors and simple layers just bring that vibe to life. There’s something so nostalgic about it. I think that’s why I love it so much—it makes me think of simpler days, when everything felt a little more chill. Or as we say in Scandinavia: hygge.
If you’ve tried my Norwegian Strawberry Cheesecake, this one has the same base, but with a creamy lemon cheesecake layer added on top.
