Strawberry Shortcake

Makes: Serves 12 to 14

If you love strawberry shortcake, you’re going to love this version. It starts with four layers of my Special Soft Sponge Cake, which is so plush and tender—like biting into a vanilla cloud.

Between the layers, you’ll find the most delicious vanilla bean mascarpone frosting, made with mascarpone, cream, sea salt flakes, and real vanilla seeds. It’s creamy, dreamy, and just the right balance of light and rich.

Tucked inside the cake are fresh strawberries and a spoonful of homemade strawberry purée—super quick to make and so much better than anything store-bought.

The whole cake is then covered in more of that luscious vanilla bean mascarpone frosting, and of course, finished with a few extra strawberries on top. It’s the kind of cake that feels like summer in every bite—light, moist, and full of flavor.

Perfect for celebrating mid-summer (as we do here in Sweden) or any sweet moment you want to make a little more special.
