Swedish Almond Cake

Makes: Serves 10 to 12

This is a typical Scandinavian Cake that you often see in Sweden at bakeries.

And if you have visited Ikea, you have probably seen it there cafe as well. But of course, a homemade version is always better.

This delicious cake has a gooey almond base; it is topped with a creamy, dreamy custard buttercream made with lots of egg yolks, cream, sugar, vanilla bean, and salted butter.

On top, I added crushed Daim candy -bars and an easy-to-make Daim candy chocolate glaze that is made in no time.

 This cake is for all of you that have a sweet tooth. A small piece of this cake goes a long way, but it is incredibly delicious.

This cake is really simple to make and freezes well. Perfect to have in the freezer, and take a slice of a small piece to enjoy with your coffee or surprise guests over for Fika.

With the combination of the gooey almond crust with the creamy, dreamy whipped custard butter and the Daim Candy glaze, you are in for a real Scandinavian-style baking treat.
