The Baking Pans I Use in My Kitchen

I often get asked what pans I use whenever I share a video of my vanilla sponge cake on Instagram, so I thought I’d share a list of a few of the baking pans I use and which ones I love the most.

Whenever I’m baking my go-to vanilla sponge cake or a chocolate layer cake, I always use my Fat Daddio’s round baking pans.

20 cm x 5 cm (8 x 2 inches) This size is perfect for baking sponge cake layers, and the higher sides give great structure to each layer.

I always keep three of these pans in my kitchen because I like to bake all the layers at once. They’re very lightweight, and the cakes always bake up evenly. I’ve had mine for nearly 10 years, and they still work just as well as they did in the beginning. While they come in different sizes, the 20 cm round is the one I use the most.

If you’re looking for a solid round baking pan that holds up over time, this is one I can truly recommend.

23 cm Springform Pan

I use a 23 cm springform pan (about 9 inches) for my ice cream cakes, cheesecakes, and any delicate cakes that need to be released without flipping.

The one I currently use is from Jamie Oliver’s collection. I honestly bought it because I loved the pretty color, and while it works fine, I’ve just never had great luck finding the perfect springform pan. Like many others I’ve tried, the lock tends to loosen over time.

That said, this one does the job for now—and until I find something better, it’s the one I reach for whenever I need a springform.

Baking Trays I Use for Sheet Cakes

HAY Aluminum Tray – 23 x 32 cm (Approx. 9 x 13 x 2 inches)

When I’m baking deeper sheet cakes, like my vanilla bean white cake or a chocolate cake, I usually use an aluminum tray from the Danish brand HAY.

23 x 32 cm, with 5 cm tall sides (approx. 9 x 13 x 2 inches) It’s lightweight, has high straight sides, and I love the clean, minimalist design. I bought it about five years ago as part of a seasonal collection, and it’s still the one I reach for most when baking cakes that need more structure.

I’m not sure if it’s still available, but you can try Googling “HAY Aluminum Tray” to see if it shows up in your area.



Gobel Baking Tray – 25 x 35 cm (Approx. 10 x 14 inches)

I also use a 25 x 35 cm (10 x 14 inches) baking tray from the brand Gobel, and I really love the size. It has high, straight sides, which makes it perfect when I’m baking roll cakes or a chocolate cake that I want to bake in a more compact tray.

It works fine and bakes evenly, but since it’s not stainless steel, the surface can start to look discolored over time if it isn’t dried properly after washing. I still use it regularly—but next time, I’d rather invest in one that’s stainless steel.
