
A classic Norwegian cake, known as “The World’s Best Cake” or Kvæfjordkake, is without a doubt one of my top 5 favorite cakes from Norway.
This cake truly lives up to its name—it’s luxurious, dreamy, and has definitely earned its title. It’s also one of the most loved cakes in Norway, and once you try it, you’ll understand why.
The cake is made in a large sheet pan. The bottom layer is a soft and fluffy yellow cake, and the second layer is a light, crisp meringue topped with sliced almonds. These two layers are baked together in one go, creating a beautiful contrast in texture.
Once cooled, I cut the cake in half crosswise and fill it with diplomat cream—a filling that’s lighter than pastry cream yet richer than whipped cream. It’s the perfect balance and adds a luxurious touch to this already delicious cake.
If you try The World’s Best Cake just once, I promise you’ll be making it again. The crispy-chewy meringue, paired with the tender yellow cake and creamy custard filling, makes every bite truly irresistible.
