
Vanilla Bean & Coconut Ganache
This vanilla bean coconut ganache is truly a mouthful of deliciousness. It’s rich, creamy, thick, and fluffy—with layer upon layer of coconut and vanilla flavor in every bite.

Now, I’ll be honest—I’m not a big fan of using coconut cream. Coconut cream just doesn’t whip up the same way regular cream does, and personally, I don’t love the taste or texture it gives in a ganache. It’s a different kind of feeling, and not the one I’m after here.

Instead, I steep the cream with vanilla and sea salt to infuse it with deep flavor, then re-warm it and whisk in coconut milk powder. You can also use coconut cream powder if you prefer. This method gives you a beautiful, natural coconut flavor without compromising texture.
And since we’re using actual cream, the ganache whips up beautifully—smooth, thick, and totally dreamy.
