Vanilla Bean – Coconut Marshmallows

If you love marshmallows and coconut, you’re going to fall in love with these coconut marshmallows. At the core, they’re just classic vanilla bean marshmallows—already so delicious on their own—but once they’re coated in desiccated unsweetened coconut, it becomes the most amazing flavor combo.

I was inspired by a candy I used to buy as a child—you could get them at the candy shop in a little bag full. They were so fluffy and bouncy, and I just remember how incredibly delicious they were. That’s why I’ve always loved the combination of vanilla, marshmallow, and coconut—it’s just a super great combo.

I use a silicone mold to shape mine into perfect little rounds, but you can absolutely make these in a greased square pan instead—the flavor is just the same. I love doing soft pink and white for the holiday season, but you can tint them any way you like.

I’ve also included a photo of a multicolored version I made for a wedding book 10 years ago (different recipe, same vibe!). It shows how fun and pretty these can be in a variety of colors.

Sometimes I even use tiny molds and decorate cakes with them—it’s the cutest detail, especially with that snowy coconut look.

These are such a lovely treat to make for the holidays—or any time you’re craving something sweet and nostalgic.
