Vanilla Bean Meringues (Inspired by Bottega Louie)
Bottega Louie is a gorgeous patisserie in Los Angeles, and if you ever step inside, you’ll instantly see why it’s so inspiring. Their display cases are filled with everything from cupcakes to macarons to the most stunning meringues in soft shades of white and pink, lightly dusted with powdered sugar.

The moment I saw them, I was like, I need to recreate these at home.
What I love most is the look—the swirled colors, the delicate dusting of sugar—but also how something so simple can feel so special. And while homemade will always have that cozy, personal charm, this recipe brings a little slice of that bakery magic into your own kitchen.

These are Vanilla Bean Meringues, infused with real vanilla bean seeds that I rub into superfine sugar. That little step creates the most incredible vanilla flavor—floral, sweet, and rich. Just like at the patisserie, they’re lightly dusted with powdered sugar and perfect for gifting. Wrap them in a clear bag, tie on a soft pink ribbon, and you’ve got something that’s just as pretty as it is delicious.

They have that perfect meringue texture too: crisp and airy on the outside, soft and chewy on the inside. Simple ingredients, beautiful results.
